Great vegetable salad recipe for your next meal or gathering. This salad can be adapted for just about any assortment of fresh vegetables.

4 oz. carrots

4 oz. potatoes

2 oz. green beans

2 oz. peas

4 tablespoons French dressing

1 teaspoon chopped parsley

½ pint Mayonnaise sauce

salt & pepper


Wash, peel and rewash the carrots and potatoes.

Cut into ¼" dice. Place each of the vegetables in a separate sauce pan, cover with cold water, bring to the boil and remove any scum.

Add little salt and boil gently until cooked.

Drain well, place in a basin and sprinkle with the French dressing.

Remove the ends from the beans and string. Cut into ¼" dice.

Place the beans in boiling salt water, after 5 Minutes add the peas and cook for a further 12 - 15 Minutes.

Drain well and add to the other vegetables.

Season the vegetables with a little salt and pepper, add the Mayonnaise sauce and mix well.
